How do I check a thermometer is accurate?

Ice water should read 32F and boiling water should read 212F adjusted for altitude. Do this when the thermometer is new so you know its offset, and repeat occasionally. A thermometer you have never checked is an assumption.

Does altitude affect the boiling test?

Yes, substantially. Water boils at lower temperatures as altitude increases, so use an altitude-adjusted figure rather than assuming 212F, or the test will tell you a good thermometer is wrong.

Is waterproofing worth paying for?

If you wash it or cook in the rain, yes. Moisture ingress is the most common way instant reads die, and a sealed unit simply lasts longer around a wet, greasy cooking environment.
